Indian coffees are generally
balanced, mild coffees, but monsooned coffee is a different
story. Potent, pungent and wild, it's great for those who like
strong, deep musty flavors.
This coffee
bean is unique. Monsooned coffees are stored in special
warehouses until the rainy season. The sides of the structure
are then opened and moist monsoon winds circulate around the
coffee beans making them swell in size and take on a
mellowed but aggressive, musty flavor. The process is very
labor intensive - coffee beans are spread on the floor of the
warehouse, raked and turned by hand to enable the seeds to soak
in moisture of the humid winds.
The process
takes 12 to 16 months, where the beans swell to twice their
original size and turn a pale golden color. Additional
hand-sortings remove any beans that did not expand properly,
and the coffee is then prepared for export.
